Hello there lovely readers of Jessica N Designs!  I’m Kelly from Eat Yourself Skinny and I’m so excited to be guest posting for Miss Jessica today!

Ok so I must admit I have quite the obsession with fun crafty blogs who have their own shops and make incredible homemade items.  Maybe it’s because I’m nowhere near that talented so I pretty much live vicariously through them.  Well Jessica’s blog is seriously one of my favorites!  I’m absolutely in LOVE with her I Do, Me Too forks and spoons and literally already have them in my Etsy favorites for when my boyfriend {finally} decides to propose.  Well you can imagine my shock and utter surprise when she asked me to guest post for her!  I mean what on Earth could I share that would even remotely compare to the gorgeousness that IS her blog?

Well I happen to cook y’all.
And I cook A LOT.
I may not be the most talented person when it comes to working with a hot glue gun or a sewing kit (oh lord that is a scary thought), but my passion lies in my little suburban kitchen and I love turning yummy fattening recipes into healthy guilt-free meals that still taste delicious!  So since I figured sharing one recipe with you would be totally boring, I’m sharing with you a full course meal you can make for your friends or for your next party {preferably both would be encouraged} complete with alcoholic beverages of course!

This is one of my favorite appetizers to share whenever I have friends over.  It’s healthy, simple to whip together and makes an amazing leftover salad the next day!

I of course can’t give you an appetizer without a fun cocktail to go with it!  These beer-garitas are a serious staple at all our cookouts during the summer and they taste sinfully delicious.  So I came up with a skinny version that I know you’ll love, they just require you to make your own homemade limeade and choose your favorite light beer and tequila.  Easy peasy!

Ok so if you didn’t think the bruschetta was enough tomato and basil for your liking, you have to try this salad.  At less than 200 calories for a whole cup of this recipe, you can happily indulge without the worry of ruining your diet!

So to go along with the bruschetta and the yummy caprese salad, I thought I’d stick with the Italian theme and share with you these lasagna roll-ups.  {Ok I know what you’re thinking, no beer-garitas aren’t exactly Italian in nature, but c’mon, they’re just too good not to share!}  The great thing about these little roll-ups are that they can be made ahead of time, placed in a casserole dish and frozen until ready to pop in the oven!  They’re perfect for any weeknight when you get home from work late or you know, just don’t feel like cooking {which can be me 80% of the time during the week!}

Here’s what you need:
1/2 package (16 oz) curly lasagna noodles (about 10 noodles)
2 cans (14 oz each) stewed tomatoes
1 can (8 oz) tomato sauce
1 container (15 oz) part-skim ricotta cheese
1 1/2 cups (6 oz) part-skim mozzarella cheese, shredded
3 Tbsp freshly grated Parmesan cheese
1/2 tsp. coarsley ground black pepper
1/4 cup chopped fresh basil
2 tsp. olive oil
1 small onion, chopped
1 small zucchini, diced
1 small tomato, diced
1 Tbsp capers, drained and chopped
Prepare lasagna noodles according to package.  Drain and rinse with cold running water.  Return noodles to sauce pot with cold water to cover.  Meanwhile, in a 3-quart glass or ceramic baking dish, combine stewed tomatoes and tomato sauce, breaking up tomatoes with the back of a spoon.  Prepare filling:  In a large bowl, mix all cheeses, pepper and 3 tablespoons chopped basil. 
Preheat oven to 375 degrees F.  Drain lasagna noodles on clean kitchen towels.  Spread rounded 1/4 cup filling on each lasagna noodle and roll up jelly-roll fashion.  Slice each noodle crosswise in half.  Arrange lasagna rolls, cut side down, in sauce in baking dish and cover loosely with foil.  Bake 35 to 40 minutes, until hot. 
Meanwhile, prepare topping: In a nonstick 10-inch skillet, heat oil over medium heat.  Add onion, cook until tender and browned.  Stir in zucchini, cook until tender.  Stir in diced tomato, capers and remaining 1 tablespoon basil, heat through.  To serve, place sauce and lasagna rolls on plate and spoon topping over the rolls.  Enjoy!  

You didn’t think I would forget dessert did you??  Sure these cookies are filled with chunks of delicious chocolate and taste just as sinful as the next cookie, but in reality they are only 30 calories and about 1 gram of fat per cookie!  Weight Watchers fans, that’s only one point each!  These little cookies satisfy that must-have-chocolate-this-very-instant-or-I’ll-go-mad craving without packing on all the extra calories.
